Need a quick lunch with serious flavour? This recipe is fast, fiery, and packed with umami. With springy noodles, crisp veggies, and a bold splash of chili oil, it’s the perfect midday pick-me-up—no microwave meals required.

INGREDIENTS

1 pack instant ramen noodles (discard seasoning)
1 tbsp vegetable oil
1 garlic clove, minced
½ cup sliced onion
1 cup mixed vegetables (e.g. bell pepper, broccoli, carrot)
2 tbsp soy sauce
1 tsp sesame oil
1–2 tbsp chili oil (adjust to taste)
Optional: 1 tsp rice vinegar or mirin for brightness

GARNISH

Sliced green onions
Toasted sesame seeds
Optional: Soft-boiled egg or crispy tofu

INSTRUCTIONS

1. Cook the noodles:
Boil ramen noodles according to package instructions. Drain and set aside.

2. Stir-fry the veg:
Heat vegetable oil in a large pan or wok over medium-high heat. Add garlic and onion; sauté for 1–2 minutes.
Toss in your mixed vegetables and stir-fry until just tender, about 3–4 minutes.

3. Add the noodles:
Add the cooked ramen to the pan. Pour in soy sauce, sesame oil, chili oil, and rice vinegar (if using).
Toss everything together until well coated and heated through.

4. Serve:
Plate up your spicy stir-fry and top with green onions, sesame seeds, and your choice of soft-boiled egg or tofu.
Serve hot and slurp it up
