Triple Truffle Mac & Cheese

Ingredients

  • 300g macaroni pasta (or any shape of your choice)
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheese (a combination of sharp cheddar,
  • Gruyère, and Parmesan works well)
  • 2 tablespoons Black Truffle Olive Oil
  • 1 teaspoon Black Truffle Sea Salt
  • 1 teaspoon Black Truffle Seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of generously salted water to a boil and cook the macaroni until al dente according to packet instructions. Drain and set aside. Slightly undercook the pasta if you plan to finish it in the oven.
  2. In a large saucepan over medium heat, melt the butter. Whisk in the flour to form a smooth paste (roux) and cook for 1–2 minutes until lightly golden and fragrant, removing the raw flour taste.
  3. Gradually pour in the milk while whisking continuously to prevent lumps. Cook for 5–7 minutes, stirring frequently, until the sauce thickens and coats the back of a spoon.
  4. Reduce the heat to low and add the shredded cheeses a handful at a time, stirring until fully melted before adding more. Continue until you have a smooth, creamy three-cheese sauce.
  5. Stir in the black truffle olive oil, black truffle sea salt and black truffle seasoning. Mix until well combined, then taste and adjust with salt and pepper as needed. The truffle flavour should enhance the cheese, not overpower it.
  6. Add the cooked pasta to the sauce and stir thoroughly until every piece is evenly coated in the creamy truffle mixture.
  7. Transfer to an oven-safe dish and place under a hot grill at 200°C for approximately 10 minutes, positioned high in the oven, until the top is golden and lightly crisp. Finish with an extra sprinkle of truffle seasoning and garnish with fresh parsley before serving.
