Greek Lemon Chicken Risoni

INGREDIENTS:
Chicken thighs
Gyros seasoning
Paprika
Garlic and herb salt
Onion
Garlic
Risoni
Stock cube
Water
Lemon rind from one lemon
Juice of half a lemon
Spinach
Truffle Infused Olives
METHOD:
1. Season Chicken: Mix gyros seasoning, paprika, garlic and herb salt. Rub onto chicken thighs.
2. Brown Chicken: In a large pan over medium-high, cook chicken skin-side down until golden (about 7 minutes), then flip and cook 3-4 minutes. Remove and set aside.
3. Cook Onion & Garlic: In the same pan, sauté onion until soft, add garlic, and cook until fragrant.
4. Cook Risoni: Add risoni to the pan, stir for 2 minutes. Add crumbled stock cube and water. Bring to a simmer.
5. Combine Ingredients: Return chicken to pan, add lemon zest and juice, cover and simmer for 10 minutes.
6. Add Spinach & Truffle Olives: Stir in spinach and olives, cook until spinach wilts.
7. Serve: Add salt and pepper to taste, and serve hot.
