INGREDIENTS:
Chicken thighs⁠
Gyros seasoning⁠
Paprika⁠
Garlic and herb salt⁠
Onion⁠
Garlic⁠
Risoni⁠
Stock cube⁠
Water⁠
Lemon rind from one lemon⁠
Juice of half a lemon⁠
Spinach⁠
Truffle Infused Olives⁠

METHOD:
1. Season Chicken: Mix gyros seasoning, paprika, garlic and herb salt. Rub onto chicken thighs.⁠
2. Brown Chicken: In a large pan over medium-high, cook chicken skin-side down until golden (about 7 minutes), then flip and cook 3-4 minutes. Remove and set aside.⁠
3. Cook Onion & Garlic: In the same pan, sauté onion until soft, add garlic, and cook until fragrant.⁠
4. Cook Risoni: Add risoni to the pan, stir for 2 minutes. Add crumbled stock cube and water. Bring to a simmer.⁠
5. Combine Ingredients: Return chicken to pan, add lemon zest and juice, cover and simmer for 10 minutes.⁠
6. Add Spinach & Truffle Olives: Stir in spinach and olives, cook until spinach wilts.⁠
7. Serve: Add salt and pepper to taste, and serve hot.⁠
